Winter Wine, we're here to help
by Flying Fish Sommelier Michael Hannken
Having a glass of wine with a meal is an integral part of dining out. Most of us have experienced occasions when the wrong glass has detracted from our enjoyment. But picking the right one from a wine list is not always a straight forward matter. This is where calling on the assistance of the sommelier or wine waiter can prove invaluable.
Our role is to help patrons negotiate the numerous brands named in the wine list. This may involve explaining an unusual grape variety, or suggesting one wine over another as a better fit for the food chosen. It may be as simple as agreeing that the selection is an excellent one. Our function here is to guide you, as if your private consultant, towards the appropriate decision.
The service we provide does not stop, however, when a wine has been chosen. It is not like purchasing a bottle from a shop and leaving with it in a brown paper bag. The wine is checked for faults, suitable glassware is placed on the table, the wine when required is decanted and you are invited to inspect the wine for yourself. Though out the course of the evening, your progress is monitored, so that should any problem arise, it can be rectified immediately. We ensure that the wine you have ordered is enjoyed as it should be enjoyed and that is at its best. Our job ends only when you require no further wine.
Wine can, and should, enhance your dining experience. At Flying Fish we offer a comprehensive varietal list of recent and aged vintages, both domestic and international. The wine list caters to all tastes, satisfies the majority of budgets and indulges all appetites for adventure. Wine service, itself, is always courteous and informed, attentive but never intrusive. We endeavour to ensure that the wine you select makes for a more memorable experience at Flying Fish.
