Sunsets through Rose´ Glasses
by Flying Fish Sommelier Peter Healy
It’s that time of year!
Clear blue sky days with perfect sunshine, oysters on the deck with Riesling or Champagne.
Cloud filled skies with sunsets creating an array of pinks, reds and purple washing over the restaurant windows and reflecting in glasses full of Rose´ - the end of a perfect day!
The message is filtering out to the wine drinking world. Rose´ is here to stay at last and it sure suits Sydney!
At Flying Fish there is always one on by the glass and a selection from around the world by the bottle. No sweet- lolly-pop styles here! All dry, mineral or earthy styles with sprinkles of spice and wafts of perfume.
As for the other popular light-ish red- Pinot Noir. After riding the wave of success for the last few years New Zealand Pinot is set for a struggle this coming year.
As the 2005 vintage wines hit the street I have tried a large selection of them and have yet to find one that is a good drink. Weedy, green thin and not much fun.
So I am pulling on my tasting trousers and looking elsewhere to be able to maintain my Pinot Noir selection for the coming year. Don’t panic though. Plenty of other Pinot out there and Mother Nature is fickle so I am sure 2006 when they are ready, will enable me to list New Zealand Pinot with confidence again.
The new degustation menu has arrived and we are very excited about the wonderful collection of wines we have matched with these dishes. Wines from Austria, France, New Zealand and Australia all weave and flow around what is a marvellous collection of textures and flavours throughout these dishes.
Order the degustation with wine, sit back with no more decisions to be made and watch the experience unfold.
Yours in Wine,
Peter Healy, Sommelier
